The Japanese Knives in the Pakkawood Series deliver precise cutting by blending traditional Japanese craftsmanship with innovative German engineering for a refined, high-performance experience.
Forestry knives are built for work in the forest and outdoors, combining rugged durability with precision and long-lasting performance.
Damascus layers provide high wear and corrosion resistance and showcase a striking wave pattern. The blades are balanced for secure control and reduce fatigue during extended use.
The symmetrical grind offers a smooth cutting feel for both right- and left-handed users and simplifies sharpening. Pakkawood laminated handles give a comfortable, moisture-resistant grip built to withstand daily use.
In this collection, each knife serves a specific culinary purpose: Gyutoh Chef's Knife for large cuts of meat and vegetables; Pankiri Bread Knife for slicing bread; Shotoh Carving Knife for precise cuts in meat and fish; Santoku knives for slicing, dicing, and mincing; Shotoh/Slicing Knife for peeling and trimming; Nakiri Cleaver for vegetable prep; Honesuki Boning Knife for boning; Kiritsuke Knife combines slicer and vegetable functions; Shotoh Utility Knife for general tasks. The blades of the Pakkawood series are built with 48 layers of steel, a hallmark of layering technology that increases hardness and flexibility. This multi-layered blade resists daily kitchen stresses and helps prevent nicks. They are crafted from FC61 steel, delivering a razor-sharp edge that supports unmatched precision in every cut. The traditional Honbazuke sharpening method refines the edge through a three-step process, producing a scalpel-like finish.
Blade lengths vary by model: Gyutoh Chef's Knife 20.32 cm; Pankiri Bread Knife 20.32 cm; Shotoh Cutting Knife 20 cm; Large Santoku 17 cm; Small Santoku 12 cm; Utility 8 cm; Cleaver 20 cm; Honesuki Boning Knife 15 cm; Kiritsuke Knife 20 cm (8 inches); Shotoh Utility Knife 12 cm; Nakiri 18 cm; Shotoh 12.5 cm.
